Simnel Cake

Ingredients

  • 3 Eggs
  • 350g Plain Flour
  • Pinch of Salt
  • 1 tsp Ground Mixed Spice
  • 700g Mixed Dried Fruit
  • 110g Chopped Peel
  • 1 Lemon – Grated Zest
  • 2 – 3 tbsp Apricot Jam
  • 1 Egg for Glazing
  • Marzipan

Instructions

  1. Heat oven to 140℃
  2. Cream butter and sugar
  3. Add eggs one at a time
  4. Sift in flour, salt and spice
  5. Add mixed peel and zest
  6. Put half of mixture into cake tin
  7. Then a layer of marzipan
  8. Then the other half
  9. Bake for 1 3/4 hours
  10. Remove and cool
  11. Brushed cooled cake with Apricot jam glaze
  12. Roll out sufficiant marzipan to cover cake, leaving enough marzipan to make 11 marzipan balls to place around top
  13. Brush with a little egg
  14. Grill or chef’s torch to finish
