Chocolate Cake with Lime Ganache


  • 185g Unsalted Butter
  • 225g Caster Sugar
  • 1tsp Vanilla Extract
  • 2 Large Eggs
  • 250g Plain Flour
  • 50 Cocoa Powder
  • 1tsp Baking Powder
  • 1tsp Bicarbinate of Soda
  • 150ml Milk

Lime Ganache

  • 100g dark Chocolate
  • 15g Butter
  • 1tbsp Cocoa Powder
  • 50ml Lime Juice
  • 3tbsp Golden Syrup

Passion Fruit Cream

  • 400ml Double Cream
  • 6 Passion Fruits
  • 1tbspn Icing Sugar


  1. Cream the butter and sugar, mix in Vanilla.Gradualy beat in the eggs.
  2. Mix together flour, choco powder, baking powder and bicarb of soda into cake mixture until combined. Gently mix in milk.
  3. Bake for 15-20 minutes


Put all ingredients into a bowl over hot water, allow to melt, then stir. Remove from the heat and set aside to cool and become firmer.


Whip the cream
Add passion fruit and icing suger
